Chè hạt kê là món cao thượng thường dùng để cúng gia tiên, vào các ngày lễ tết. Có thể nói chè kê rất gắn liền với người xứ Nghệ, đó là món của truyền thống, món của quê hương, món của hương vị tết, món của tinh thần và lòng biết ơn.
Ngày nay hạt kê vẫn còn quý nhưng không quá hiếm như ngày xưa. Hạt kê đã được sử dụng vào cuộc sống bình thường nhiều hơn. Người ta dùng hạt kê nấu các món tẩm bổ cho người ốm, các bữa ăn dặm gia đình, nấu món thực dưỡng…
Ở bài viết này Thái Phong chia sẽ kinh nghiệm nấu món chè kê mang bảng chất đúng xứ Nghệ. Ngoài ra chúng ta có thể thêm bớt các thành phần, thêm bớt gia vị để tùy biến theo vùng miền và khí hậu.
CÁCH LÀM MÓN CHÈ KÊ NGÀY TẾT XỨ NGHỆ
Bước 1: Chuẩn bị:
- 1 chén hạt kê (chén ăn cơm)
- 1 chén ăn cơm mật mía (có thể dùng đường đỏ, hoặc đường trắng)
- 5 chén nước
- 1 ít gừng thái mỏng, cắt sợi (có thể bỏ qua, nếu thời tiết mùa hè, người cao huyết áp)
Hạt kê bạn có thể đặt mua theo đường link, gia hàng toàn quốc: hạt kê nếp vàng (đã bóc vỏ sẵn)
Một số không bắt buộc: Lá dứa, Nếp (1/2 chén), Đậu xanh 1/2 chén … Những loại này thường để nấu phá cách theo các vùng miền khác.

Bước 2: Cách nấu chè kê
- Hạt kê ngâm nước và vò đi vò lại nhiều lần và rửa cho sách, mục đích loại mỏ một số vỏ còn sốt, khi ăn bị nhám.
- Sau đó ngâm hạt kê với nước trong khoảng 10-20 phút.
- Cho hạt kê vào nồi thêm nước (4-5 chén) cho lửa vừa phải (liu riu).
- Đến khi nồi chè sôi thì bạn hạ nhỏ lửa, rồi dùng muỗng khuấy đều liên tục để hạt kê không bị cháy và khi hạt kê chín sẽ nở ra hơn.
- Sau khi hạt kê đã nở thì cho 1 chén mật mía ( đường ) vào và tiếp tục khuấy đều. Bạn tiếp tục nấu đến khi đường tan hết thì nêm lại cho vừa vị ngọt của gia đình rồi thì tắt bếp.
- Cho một ít gừng rợi đã thái rẵn vào, khấy đều, chờ chè nguội cho đông đặc.
Múc chè ra chén, là hoàn thành.
